Yes, these babies are stuffed. Stuffed with goat cheese. It’s a riff on the classic pairing of beets & goat cheese.
I have to say, it was fun making these. I’ve never made gnocchi before, and it was a little tricky, but the process is so beautiful, especially the color of the beets and working with it.
I still have to learn how to make these better, and next time will be trying this recipe.
The gnocchi had a very assertive flavor, between the beet flavor and tangy goat cheese, and I didn’t want to mask that with a sauce. So I lightly dressed it with some olive oil and pistachio slivers.
